* refactor: remove unused optional assignees key According to the GitHub docs (https://docs.github.com/en/communities/using-templates-to-encourage-useful-issues-and-pull-requests/syntax-for-issue-forms#top-level-syntax) this key is optional. Since it's unused, it is fine to remove. * chore: bump version examples for software Older versions might confuse people filing new issues, so newer versions of mentioned software are used as examples.
